Lindsey and her husband welcomed their first child last May. They had a beautiful baby girl, the first granddaughter of of our family, Imogene. Wasting no time, they are now expecting their second child just two months after Imogene’s first birthday. Our entire family was excited to learn if we would have a second granddaughter in the family or if Lindsey and her husband would have both a daughter and a son. Gender reveal parties and announcements have become very popular recently as more and more parents find out the sex of their baby before the birth. To help the other mothers and fathers-to-be come up with creative gender reveal moments, I have compiled a list of clever ideas to make the announcement at a party and through the mail.

Let’s get started with gender reveal ideas for parties. Gender reveal parties are fun, because you get to share fun, love, friendly rivalries{who is rooting for a boy and who is rooting for a girl?}and reactions with those you love the most. You can do the gender reveal in front of your friends and family or they can join in on the fun with you using one of these ideas.

The pinata is a tried and true gender reveal favorite. Pinatas already make for fun party games, but they get even cooler when they offer more than candy. You could keep pinata fun for the kids and fill it with pink or blue lollypops, jolly ranchers, airheads, mints, taffy, rock candy, m&ms and more. Or, you can fill it with confetti, flower petals, glitter or balloons for the more grown up crowd. There are plenty of cool designs for a baby shower and gender reveal party, too.

“Shower” Gender Reveals

A fun way for adults and kids to join in on the gender reveal announcement is through a silly string war. You will need to let store clerks or close friends in on the gender in order for the gender reveal to remain a surprise for you. Just wrap some butcher paper around the silly string bottles to keep color a secret during the party until you are ready to let them rip. The couple can join in on the fun or let the crowd spray them with the announcement.

Crustless Spanakopita Recipe

If you have read our blog before, then you are probably already familiar with how much I love Greece. You can check out my posts about my trip to Athens, Rhodes and Santorini. I will write about my archaeological excavation in Greece soon as well! My love for Greece congruously includes Greek food. I have explored many Greek islands and most of mainland Greece except the Peloponnese. This is odd considering that the Peloponnese is the only place in Greece from which my mother’s family hails. Despite my oversight, I love what food that I have tried in Greece – from popular dishes all around Greece to regional favorites.

One of my all-time favorite dishes of any cuisine is spinach pie (known as spanakopita in Greek). I used to eat this everyday for breakfast while I studied abroad. I am not alone in this. Like gyros, this is one of the perennial national dishes of Greece. Unfortunately, as with all heavy, breaded foods, you will eventually gain weight when it becomes part of your regular diet. Due to my PCOS diagnosis, I can no longer afford to include sugar and empty/refined carbohydrates in my diet. I heard about making a crustless version of spanakopita from grecophiles and so I turned to the internet as we all do nowadays. After a lot of trial and error, I have created my favorite crustless spanakopita recipe. Because this recipe uses coconut flour instead of regular white flour, it is low-glycemic and low-carb. That does not say anything about the fat content, though (which is why I use light feta and skim milk). Nonetheless, you cannot beat the savory taste for a breakfast dish. For me, it is difficult to put down (which shows me that I have gotten it right).

What I love most about this crustless spanakopita recipe more so than other spanakopita recipes is the tang of the lemon zest. It adds flavor to the spinach and complements the salty feta very well. It is a delicious way to get some veggies into your breakfast or lunch. In my experience, one pan can last for a week’s worth of breakfasts. Although I miss the crunch of filo dough, this crustless spanakopita recipe makes it easy to enjoy a low-glycemic dish without feeling like you are missing out on the real deal. This zesty crustless spanakopita is full of savory flavor and makes for a filling breakfast or snack. It is ideal for diabetics, those on a low-glycemic diet and anyone watching their figure.


  • 4 cups Spinach (Chopped)
  • 0.75 cup Scallions (Chopped)
  • 3 teaspoons Dill (Fresh, Minced (1.5 TSP if dried))
  • 3 tablespoons Parsley (Minced)
  • 0.5 - 1 clove Garlic (Minced)
  • 0.5 - 1 teaspoon Lemon Zest
  • Ground Pepper (To Taste)
  • 2 Eggs
  • 2 tablespoons Olive Oil
  • 0.5 cup Milk
  • 3 tablespoons Coconut Flour
  • 1 teaspoon Baking Powder
  • 0.5 cup Parmesan (Grated)
  • 8oz Feta (Crumbled (I like to use light feta))


  • 2 tablespoons Mint (Minced)
  • 1 teaspoon Rosemary (Fresh (0.5 TSP if dried))


Step 1 Coat an 8" x 8" cooking pan with oil or cooking spray. Set aside.
Step 2 Pre-heat the oven to 375° F.

Sift the coconut flour and baking powder into a bowl. Set aside.

In large bowl, combine the spinach, scallions, mint, dill, parsley, rosemary, lemon zest, ground pepper, eggs, olive oil, milk, Parmesan cheese and feta cheese.

God is focal in weddings. Marriage is a religious institution dating back to the beginning of civilization. The bride and groom pray for courage to steady their nerves before the wedding. The pastor or priest presiding over the ceremony anoints the marriage in his final steps before declaring the man and woman to be husband and wife.


God is befittingly everywhere in a wedding. Devotion to Him and adoration of Him can be found in many areas of the wedding ceremony and reception. When photographing the wedding, you will want to capture each of the important components. For most, faith is deservedly paramount. There are many ways to capture the role of faith in weddings. Many brides and grooms pray alone or with their wedding party, parents or close ones before the ceremony. Some make covenants with God as part of their wedding vows. Spring has finally dawned and I do not know about you, but the extra daylights savings seem to have just shed light on all of the dust and grime in my house. The dirt seems that the dirt and dust does not disappear indoors as snow does outdoors. That was a disappointment. Unfortunately, that means that I needed to take one of those new sunny days to stay inside and clean up the neglected places in my home. The usual suspects were the culprits. They were the places that we are probably all guilty of neglecting during the cold seasons: the range hood, cabinet doors, window sills, fireplace, etc.

It was important to me to get this done in the quickest, most efficient way that did not involve a glut of chemicals. So, I grabbed my handy cleaning supplies and went to work. To clean off the worst buildup, including fireplace soot off of brick, I just used:

  • Viva® Vantage® towels
  • Natural Cleaning Solution
    • White Vinegar
    • Baking Soda
    • Lemon

I started unleashing the clean beginning with the kitchen. The kitchen hood was worse than I though. Somehow it was sticky. I will never figure out how that happened.

Thankfully, with just a Viva® Vantage® towel and my natural cleaning solution, I had the range hood looking brand new in under two minutes.

I only had to use one paper towel to get the job done, too, because Viva® Vantage® towels are thick with a terrycloth-like texture capable of handing rough scrubbing.

I move onto the cabinet doors next. The cabinet doors are often overlooked, but they receive plenty of drips and drops that create dried stains over time.

One pass with a Viva® Vantage® towel covered with the natural cleaning solution and the cabinets were spotless.

I moved on to the window sills, which had been neglected since the fall when they became cold to come near. They were covered in dust and the usual buildup.

Fortunately, one towel was enough to clean three window sills without breaking or leaving any residue behind.

I saved the most troublesome for last: the fireplace. The fireplace got its fair share of use this winter, which meant that it became blacker and blacker each week. To prevent (or maybe slow) it from becoming completely black, I decided to have a go at cleaning it.

I was able to remove a great deal of grime using four to five Viva® Vantage® towels and my cleaning solution. Although my fireplace is brick, the Viva® Vantage® towels did not rip while I scrubbed thanks to their thick scrubby texture, like terrycloth.
