It is fairly easy to capture the bride with her mother and groom with his father on film before the wedding ceremony. Each often helps their bride daughter and groom son dress for the wedding. The father of the bride also has a moment alone with his daughter bride as he prepares to walk her down the aisle. For grooms who walk down the aisle with their mother, the moments before and the event itself offer ideal photo opportunities. Here you can capture the bond between mother of the groom and her son as he prepares for his marriage. For those who do not choose to have the mother of the groom accompany her son down the aisle, finding moments of the two  alone together in an uncontrived manner may be difficult. It is important, though, to capture their love for one another in a genuine way during the day. That will be far more memorable for each of them and their family than a staged photo of smiles straight at the camera. Any photos of the two together will be lovely, but the less staged the more powerful they are. It may be difficult to capture this bond naturally, but a mother’s love is worth capturing in an authentic way on this important day.

Summer is proving to be no picnic for us. Even though I am less than ten miles from the ocean, temperatures are topping 100° and hanging steady in the 90’s. I am not dealing with much humidity, either. With weather like this in Los Angeles and around the country, one is in need respite. What better liquid refuge from the summer heat is there than lemonade? That’s right – strawberry lemonade.

If you are like my family, you strive to do things the natural (and usually more delicious) way whenever possible. The calories and chemicals can add up quickly when you buy pre-made lemonade or pre-packaged lemonade mixes. Lemonade is one of the simplest and tastiest enduring beverage recipes. To make it delicious requires the use of real lemons.

In order to be able to drink this strawberry lemonade recipe time and time again, it necessary to cut down the sugar. This is where Stevia comes in. Stevia may not be the best sweetener when it comes to baking, but as any Stevia user knows, it is ideal for sweetening beverages. Cutting down on the sugar by using Stevia is better for your teeth and diet.

My personal love of Stevia stems from my need to eat a low glycemic diet in order to treat my PCOS naturally. Without it, I would be confined to consuming a few coconut sugar-sweetened drinks and desserts here and there. That is no way to live, so I have started taking a more natural approach to desserts. You do not have to sacrifice flavor (especially sweets) in the name of healthy eating.

This strawberry lemonade recipe is case and point. I enjoy drinking it freshly made, so my recipe it for a single serving only. It is quite easy, though, to ramp up the serving size to create a pitcher of sweet lemonade. Also, if you like carbonated water at all, I highly recommend using it (flavored or unflavored) in this recipe. I am only a moderate fan of carbonated water and I LOVE making this recipe with carbonated water. Enjoy!

Strawberry Lemonade Recipe

Ingredients

  • 1 cup almond milk (60 calories total (unsweetened, 30 calories per 8 oz. serving))
  • 175g self-raising flour
  • 2 cups flour (all-purpose)
  • 2 cups flour (all-purpose)
  • 2lb beef (chopped into cubes)
  • 2- 2 1/2 cups sugar
  • 175g self-raising flour
  • 10 dates (de-seeded and mashed)
  • 1 cup quinoa (dry)
  • 1/2 cup oat bran (or quick cooking oats pulsed to a meal in a food processor)
  • 1 3/4 cup Hawaiian Sweet Roll (1/2 inch cubes)
  • 1 1/4 cup milk (whole milk is best)
  • 2lb Raw chicken with bone in and skin on (legs and thighs are ideal (for cartilage))
  • 4 cups Spinach (Chopped)
  • juice of 1 lemon
  • 2 cups Watermelon (Frozen)
  • 1 Sweet Potato (steamed)
  • 3 tablespoons pumpkin puree (35 calories)
  • 50g margarine
  • 1 teaspoon baking soda
  • 1 1/4 teaspoon baking soda
  • salt (to taste)
  • 1 cup water

  • 4 teaspoons coconut oil
  • 2 cups vegetable broth (you can substitute water as well)
  • 3 teaspoons coconut oil
  • 2/3 cups Milk (Cow's milk or almond milk)

Optional

  • Chicken Broth (you can use this in addition to water to add flavor. If you use this, try using one without many preservatives. I recommend skipping it altogether.)
  • 1 handful Strawberries (Frozen)
  • 1 tablespoon Olive Oil
  • 2 tablespoons Mint (Minced)
  • 1 sprinkle Stevia
  • 2 cloves Garlic
  • 1 teaspoon Rosemary (Fresh (0.5 TSP if dried))
  • 3 leaves Bay Leaf

Directions

Step 1 Place all the ingredients in a blender and blend until you have a smooth consistency.
Step 2 Place the flour and caster sugar into a bowl and create a well in the middle for the other ingredients.

Mix the eggs, vanilla extract, milk and margarine and then pour it into the bowl with the dry ingredients.

Mix well until it is lump free and then break the chocolate into small pieces and add them.
Step 3 Preheat oven to 350°.

Step 4 Put your Cocoa Spread in the fridge. It needs to be hard in order to work with it.
Step 5 Set up your crock pot and turn it to high.
Step 6 In a medium saucepan combine sugar and 1 cup water; cook and stir over medium heat until sugar is dissolved and mixture just comes to a boil.
Step 7 Place the flour and caster sugar into a bowl and create a well in the middle for the other ingredients.

Mix the eggs, vanilla extract, milk and margarine and then pour it into the bowl with the dry ingredients.

Mix well until it is lump free and then break the chocolate into small pieces and add them.
Step 8 If the dates contain seeds, deseed them before processing them.
Step 9 Rinse quinoa. Combine quinoa, broth {or water}, seasoning salt and dill in a saucepan and cook according to package directions.
Step 10 Pulse oats in a food processor, if you are using the quick cooking oats option.
Step 11 Preheat the oven to 350°
Preparing the Dough
Step 12 Heat the 1 cup of milk, oil, and sugars in a medium saucepan over medium heat. Cook just enough to melt the coconut oil and dissolve the sugar, about 2 minutes.

Place the whole chicken into the crock pot. Cut it up as needed in order to make sure that it fits.

Step 14 Coat an 8" x 8" cooking pan with oil or cooking spray. Set aside.

Rinse the strawberries and remove the stems.

Place the frozen watermelon and optional frozen strawberries into the food processor. Process until there are no large chunks and the ingredients are thoroughly combined.

Step 17 Grease an 8 x 8 round baking pan and set aside. Pre-heat the oven to 325 degrees F.
Step 18 Pour the muffin mixture into a muffin tin filling each mould up to two thirds full.

Place a block of chocolate into the middle of each muffin. Then sprinkle some sugar over the top of each.

Mince the fresh mint. The leaves of approximately two stems of fresh mint should yield two tablespoons of fresh mint

Step 25 While the quinoa is cooking, do all of your chopping and preparation.
Step 26 Add all ingredients to a food processor and blend until well combined.
Step 27 Arrange bread cubes in a single layer on a baking sheet.
Preparing the Dough
Step 28 Set aside and cool until it is lukewarm.
Step 29 Pour in the apple cider vinegar and olive oil.
Step 30 Pre-heat the oven to 375° F.
Step 31
Place the strawberries in a glass and mash them. Alternatively, to create a puree, blend the strawberries in a blender. Pour the puree into a glass.

Add the lemon juice, club soda and optional stevia. Process the ingredient until thoroughly mixed with a sorbet consistency. Add club soda as needed.

Step 33 Slice the sweet potatoes into half inch slices and place into a steamer. Steam the slices for roughly 15 minutes or until a knife can easily glide through the sweet potatoes. Once steamed, remove the sweet potatoes from the steamer and place a bowl to cool.
Step 34 Cook for around 20 minutes in a preheated oven at 200ºC / 390ºF / gas mark 5. After 18 minutes or so check to see if they are cooked enough.

Insert a knife into one of the muffins and if no mixture is on the knife then they are cooked!

Step 35 In a separate bowl, smash the bananas and combine with oil until the consistency is even

Step 36 In a large bowl, beat the butter, sugars, eggs and vanilla together.
Step 37 Put the olive oil in a pan and brown the beef cubes, rotating them in order brown each side. This will really sear flavor into the meat. When the beef is done cooking, toss the pieces into the crock pot.
Step 38 In a separate large container combine 1 gallon water and tea bags; let brew 30 minutes.
Step 39 Cook for around 20 minutes in a preheated oven at 200ºC / 390ºF / gas mark 5. After 18 minutes or so check to see if they are cooked enough.

Insert a knife into one of the muffins and if no mixture is on the knife then they are cooked!

Step 44 Sprinkle the yeast on top and let it sit on the liquid for a few minutes. {Note: if the mixture is too hot when you add the yeast it may not rise correctly. You want it to be temperature of a baby's bottle.}

Fill the crock pot with water just enough to cover the chicken. If you are using chicken broth, use a mixture of half part water and half part chicken broth just enough to cover the chicken.

Sift the coconut flour and baking powder into a bowl. Set aside.

Squeeze the juice of one lemon into the glass over the strawberries.

Step 48 Melt the coconut oil either by running the bottle under warm water or by heating it in a bowl in the microwave. Make sure that the eggs are room temperature. If they are cold, the coconut oil will harden when the ingredients come into contact.

Step 50 Stir in the vanilla powder and milk until the batter is a smooth consistency.

Step 63 If you feel your dough is hard enough to shape, pull out your Cocoa spread and move on. But if you feel it needs some chill time, then cover the dough with plastic wrap and pop it in the fridge for 2 hours or so. When the dough is firm enough, pull it out of fridge.

Step 65 Fill a 2- to 3-gallon punch bowl half full with crushed ice; pour in almond iced tea and serve.

For a nut topping, crush the nuts using a rolling pin. You can also place the nuts into a plastic bag and crush them with a heavy glass cup or jar.

Step 83 There are two ways you can stuff the cookies. The first way - hand roll about 1 1/2 tablespoons of dough into balls, placing on a plate to wait for stuffing.

Step 111 Place ramekins in an 8-inch square baking pan.

Step 112 Beginning at the wide end farthest from you, roll the rectangle tightly towards you. Use both hands and work slowly, being careful to keep the roll tight. Don’t worry if the filling oozes as you work. When you reach the end, pinch the seam together and flip the roll so that the seam is face down. When you’re finished, you’ll wind up with one long buttery, cinnamony, sugary, gooey log.

Step 113 Spoon out a small amount of cocoa almond spread and place it inside the hole.
Step 114 Add enough hot water to pan to reach 1 inch.

Step 115 Use a serrated knife to slice your log into 1/2-inch rolls. Grease 1 large or 2 average sized pans. Place the sliced rolls in the pan(s), being careful not to overcrowd.

Step 117 Bake at 325° for 35 minutes or until set.

Step 119 Place each cookie on a greased or parchment paper lined baking sheet.

Step 121 Remove the towel and bake for 15 to 18 minutes, until just golden brown. Don’t allow the rolls to become overly brown.

Step 123 While the rolls are baking, make the icing: warm 1/4 cup of milk up slightly and stir in coffee granules until they dissolve completely.
Step 124 In a large bowl, whisk together the powdered sugar, maple extract, butter and salt.
Step 125 Stir in the warmed milk slowly until you have the consistency that is somewhat thick but still very pourable. {You may not use all of the milk.} Whisk until very smooth.
Serving
Step 126 Remove rolls from the oven. Immediately drizzle icing over the top. Be sure to get it all around the edges and over the top. As they sit, the rolls will absorb some of the icing’s moisture and flavor.

“Shower” Gender Reveals

A fun way for adults and kids to join in on the gender reveal announcement is through a silly string war. You will need to let store clerks or close friends in on the gender in order for the gender reveal to remain a surprise for you. Crustless Spanakopita Recipe

If you have read our blog before, then you are probably already familiar with how much I love Greece. You can check out my posts about my trip to Athens, Rhodes and Santorini. I will write about my archaeological excavation in Greece soon as well! My love for Greece congruously includes Greek food. I have explored many Greek islands and most of mainland Greece except the Peloponnese. This is odd considering that the Peloponnese is the only place in Greece from which my mother’s family hails. Despite my oversight, I love what food that I have tried in Greece – from popular dishes all around Greece to regional favorites.

One of my all-time favorite dishes of any cuisine is spinach pie (known as spanakopita in Greek). I used to eat this everyday for breakfast while I studied abroad. I am not alone in this. Like gyros, this is one of the perennial national dishes of Greece. Unfortunately, as with all heavy, breaded foods, you will eventually gain weight when it becomes part of your regular diet. Due to my PCOS diagnosis, I can no longer afford to include sugar and empty/refined carbohydrates in my diet. I heard about making a crustless version of spanakopita from grecophiles and so I turned to the internet as we all do nowadays. After a lot of trial and error, I have created my favorite crustless spanakopita recipe. Because this recipe uses coconut flour instead of regular white flour, it is low-glycemic and low-carb. That does not say anything about the fat content, though (which is why I use light feta and skim milk). Nonetheless, you cannot beat the savory taste for a breakfast dish. For me, it is difficult to put down (which shows me that I have gotten it right).

What I love most about this crustless spanakopita recipe more so than other spanakopita recipes is the tang of the lemon zest. It adds flavor to the spinach and complements the salty feta very well. It is a delicious way to get some veggies into your breakfast or lunch. In my experience, one pan can last for a week’s worth of breakfasts. Although I miss the crunch of filo dough, this crustless spanakopita recipe makes it easy to enjoy a low-glycemic dish without feeling like you are missing out on the real deal.   1. Coat an 8" x 8" cooking pan with oil or cooking spray. Set aside.
  2. Pre-heat the oven to 375° F.
  3. Sift the coconut flour and baking powder into a bowl. Set aside.

  4. In large bowl, combine the spinach, scallions, mint, dill, parsley, rosemary, lemon zest, ground pepper, eggs, olive oil, milk, Parmesan cheese and feta cheese.

  5. Pour in the sifted flour mixture and combine all of the ingredients until consistent.
  6. Pour the mixture into the pan.
  7. Bake in the oven at 375° F for 45-60 minutes.
