It has been far too long since we posted a recipe for our readers. What better way to bring it back than with a raw vegan mint chocolate truffles recipe? Certainly, none that I can think of. On top of being raw and vegan, these truffles are also gluten-free and low in the glycemic index. They hit so many dietary checkmarks that they are sure to fit most diets.

I love this recipe, because it provides a sweet and healthier alternative to traditional truffles. It may seem counter intuitive, but dates actually have a low glycemic index and a low glycemic load. This means that they do not raise your blood sugar significantly. The dates are quite sweet, too, which eliminates the need to add additional sweetener. Additionally, raw cacao is very beneficial in stabilizing blood sugar levels.

This is ideal for diabetics and others who have issues with blood sugar, such as myself. I have had to undergo many dietary changes due to blood sugar and hormonal issues associated with PCOS. So, I appreciate it when a treat can be tailored to meet my needs.

This raw vegan mint chocolate truffles recipe has other healthy factors as well. It uses coconut oil, which when used in moderation, is helpful is raising HDL (good fat) levels. At proper levels, HDL fats protect the heart. It also contains mint, which has anti-inflammatory properties. Mint can help fight sinus infections, colds, headaches, and digestive problems. (Plus it is great for treating acne as well.)

Obviously, this dessert is not intended to cure you of any health problems. But, it always better to eat to something that is more beneficial than harmful. After all, who says that a dessert has to be bad for you?

This low glycemic recipe of raw vegan mint chocolate truffles offers a naturally sweet and healthier dessert or snack items for those with dietary restrictions. It is also paleo, gluten-free and low glycemic.

Ingredients

  • 10 dates (de-seeded and mashed)
  • 4 teaspoons coconut oil
  • 1/2 teaspoon vanilla extract
  • 5 tablespoons raw cacao powder (plus extra for dusting)
  • 2 tablespoons fresh mint (minced)
  • nuts of your choice (crushed for rolling - optional)

Directions

Step 1 If the dates contain seeds, deseed them before processing them.
Step 2
Mince the fresh mint. The leaves of approximately two stems of fresh mint should yield two tablespoons of fresh mint

Place the dates, raw cacao powder, coconut oil, vanilla and mint into a blender, mixer or food processor. Process the ingredients until you have a uniform paste.

For a nut topping, crush the nuts using a rolling pin. You can also place the nuts into a plastic bag and crush them with a heavy glass cup or jar.
