Diet Friendly Sweet {and Salty} Cinnamon Bun Popcorn

Girrrrrrl, we need to talk!  So many things have happened since I was last on IP.  And a good few of them pertain to the creation of this healthy cinnamon bun popcorn recipe.  From the top of that list—I got a popcorn maker!  And as much as I have wanted one for the past year or so, I have concluded that this was more of a gift for my boys than it was for me.  They have been pop, pop, popping like it’s their business for the last few weeks.

In other big news, I have put losing 30 pounds near the top of my resolution list.  Can you believe it?  What a novel idea, right?  The truth is I start every year with a determination to trim down, whether I make it a resolution or not.  But this year is slightly different.  This year my family is doing a weight loss challenge {Claire and Lindsey are both in it to win it}.  We each put in a tidy sum of money, and the person with the most pounds lost by the end of March takes the pot.  Oh, did I mention I got a personal trainer?  His name is Aiden and he is eight.  He volunteered to do it for free with the promise of a 10% cut if I win.  And is he ever motivated!  He will randomly tell me to drop and give him 20, or order 100 jumping jacks before I hit the shower.  He also monitors my meals and asks if I should be eating this or that. Unlike his father, who receives the cold shoulder for such comments, he is just too cute to ignore.

For me losing weight means running like the wind, goodbye to gluten and handling my sweet tooth with care.  You see, I can’t ignore it completely or it will attack with a vengeance one stressful night when the kids are sick or Avery won’t sleep.  And I can’t give into it completely or my diet would solely consist of cinnamon rolls and chocolate truffles.  What I have found to be the best route is to trick it.  I find something that is pretty healthy and eat a measured portion daily.  I’m sure you can see where this is going…

It started with some air popped popcorn and the recommendation to drizzle melted coconut oil over it in lieu of butter.  So I tried that, and it was fantastic.  Then I decided it could be sweeter, and from there this concoction was born.  I plan to experiment with cocoa powder, ginger and whatever else I can think of in the near future.


  • 1/2 cup popcorn kernels
  • sea salt
  • cinnamon
  • 1 Tbl virgin coconut oil {there is a difference, you won’t get a coconut-ish flavor if it is processed}
  • 2 Tbl honey {or other sweetener of your choice. Agave or stevia could work, use discretion with amounts to control the sweetness}


  1. Air pop your kernels.  If you have a compartment that melts butter, put the coconut oil and honey in there.  If you don’t have an air popper then you can pop it in a pot with a lid using a tablespoon or two of coconut oil over low-med heat.  You just have to take into consideration that the batch will have an extra few hundred calories.
  2. Sprinkle popped corn lightly with sea salt and heavily with cinnamon.
  3. If you haven’t melted the coconut oil and honey together yet, do so in the microwave or in a small pan on the stove top.  It should take less than a minute.  Stir it around a few times, and drizzle it over the popcorn.  Toss the popcorn until it is evenly coated.

***Alternatively, if you are not avoiding sugar like the plague as I am right now; you could sprinkle the popcorn with cinnamon sugar and then just pour melted coconut oil over that.  Dont forget to salt lightly and toss well.
