Summer is upon us, and nothing says summer quite like cold lemonade. The only way possible to improve lemonade is to make it colder and add some ice cream and that’s exactly what this pie does. This is my family’s favorite recipe for the 4th of July. My mom sometimes has to make 5 pies just for my immediate family. It’s the perfect way to kick off the summer and slake your sweet tooth for both kids and adults. Believe me, I’ve never met one person no matter what age, food likes/dislikes, or picky eater or not that didn’t absolutely love this pie. So, enjoy it and your summer!
Ingredients
1 9-inch graham cracker pie crust (homemade or store bought)
1 quart vanilla ice cream
1 8 oz lemonade concentrate
1 6 oz tub of whipped cream
a few lemon slices
Let the ingredients thaw to the point where you can mix them. Mix together the ice cream, lemonade and whipped cream thoroughly until you have an even consistency. Pour the mixture into the pie crust and add a few slices of lemon on top (the more the better). Put in freezer until the pie is solid. Then cut and serve!
